Food Safety Education Classes

  • ServSafe classes are taught virtually on Microsoft Teams.
  • Proctoring of the ServSafe exam is in person and held at the Craven County Health Department.

The Food and Lodging section recognizes that education is the least expensive, yet most effective means to reduce the occurrence of food-borne illness. We are committed to the protection of the health and well-being of the citizens of Craven County.

Food Safety Systems

Increases in outbreaks of food-borne illness across the country have focused the public's attention on the causes and prevention of outbreaks in food service establishments, as well as at home. Changes in agricultural practices, ecological changes, international travel and commerce, changes in lifestyle, emerging pathogens and the high turnover rate in the food service industry, indicate the need for an ongoing food safety education program.

The Hazard Analysis Critical Control Point (HACCP) food safety system is utilized to enable food service owners, managers, and food service employees to:

  • Build in procedures that reduce the risks of food-borne outbreaks
  • Identify the foods and procedures that are most likely to cause food-borne illness
  • Monitor all procedures to ensure food safety

Food Safety for Managers (ServSafe) Class and Proctoring

ServSafe classes are offered online through the Craven County Health Department.

Exams and classes are offered for a fee of $75 per person with a 5 person minimum. Call to confirm that enough students are registered to offer the course. Payments are due 7 days prior to the date of Instruction or Proctoring.  Payments can be made in person at the Craven County Health Department or by phone at (252) 636-4936.

It is highly recommended that students read the ServSafe coursebook and other sources of materials prior to the class and exam.

Each student must purchase their own class materials and testing materials:

  • An online testing voucher (required),
  • A laptop computer or other mobile device must be provided by each student for taking the exam,
  • and ServSafe textbook (optional).

ServSafe classes are taught virtually using Microsoft Teams. 

Proctored exams will be in person and taken on an electronic device. Participants will need to bring their own electronic device to take the proctored exam.

After submitting the form, please call (252) 636-4936 to confirm your registration. Payments should be made after registration confirmation.

Community Colleges and Testing Centers may also offer ServSafe classes and exam proctoring. Contact your local community college or professional testing center for more information.
